<p>For simplicity, we are using the <strong>UN&#8217;s</strong> definition of sustainability:</p>
<p>A sustainable society meets the needs of the present without sacrificing the ability of future generations to meet their own needs.</p>

<p>According to Wikipedia a <strong>sustainable city</strong>, is a city designed with consideration of <strong>environmental impact</strong>, inhabited by people dedicated to minimization of required inputs of energy, water and food, and waste output of heat, air pollution &#8211; CO2, methane and water pollution.</p>

<p>Cities compete with each other globally for the attention of investors. Almost every municipality sites <strong>sustainability</strong> as one of its <strong>key targets</strong>, but it is often not clear as to how this <strong>declaration </strong>translates into <strong>action</strong>, or if the actions that are taken go beyond <strong>green window dressing</strong>.</p>

<p>The <strong>first step</strong> when steering towards urban sustainability is visible greening: <strong>planting trees</strong>, promoting subsistence <strong>gardening</strong> or <strong>saving wetlands</strong> for birds.</p>

<p>The next steps are <strong>environmental measures</strong> which bring <strong>social </strong>and <strong>economic</strong> benefits. Health concerns can put emphasis on quality of <strong>water</strong>, provision of <strong>sanitation</strong> and <strong>cleaner energy</strong>.</p>

<p><strong>Waste management</strong> can also turn into business, when sorting produces material for <strong>local crafts</strong> people and <strong>bio waste</strong> becomes a source of <strong>energy</strong>. Clogged sewers lead to a <strong>ban on plastic bags</strong> while lessons about<strong> ecosystem </strong>services are learned when <strong>rivers are cleaned</strong> and <strong>watersheds</strong> are <strong>managed</strong> in an effort to <strong>prevent flooding</strong>.</p>

<p>Almost every city in the world is dealing with an influx of people from different <strong>ethnic </strong>backgrounds, and <strong>cultural events</strong> play an important part in creating a <strong>sense of pride</strong> in the community and are promoted as a means to support minorities. <strong>Cultural heritage</strong> is increasingly understood as a resource to be kept alive, both for visitors to cities and for the people who live there.</p>

<p>In the cities that try to fake it, the <strong>grassroots heritage aspects </strong>and<strong> authenticity</strong> disappear as events grow bigger and more commercial. <strong>Major events</strong> that require substantial investment, such as festivals and sporting events  do not always enhance quality of life for <strong>local communities </strong>after the television cameras have left.</p>

<p>Some cities are aware of the links between <strong>global</strong> targets and <strong>local </strong>actions. Sustainability measures are taken at the local level, including investment in <strong>renewable energy</strong> and efficiency requirements for local buildings. More advanced cities broaden the focus to cover <strong>social impact</strong> and how<strong> sustainable development</strong> <strong>policy</strong> is delivered. <p><strong>Refurbishment </strong>of existing buildings becomes big business, <strong>public transport</strong> systems are improved and <strong>sustainable public procurement</strong> practices are introduced.</p>

<p>While all these aspects constitute progress, it is misguided to think that they combine to create urban sustainability. True <strong>systemic change</strong> is missing from the picture. Progress to date has been far too slow and incremental changes to business as usual don&#8217;t go far enough.</p>

<p>The tough road ahead will have to include <strong>holistic visions</strong>, <strong>integrated planning</strong> and <strong>brave strategies</strong> to implement them. For this to become a reality, the <strong>language of money</strong> must become more about <strong>sustainability</strong>, <strong>renewable energy</strong> sources must be fully integrated into urban <strong>infrastructure</strong> and the pedestrian must become king of the road.</p>

<p>I have always wanted to write about the under-rated, oft-misinterpreted or worse, misrepresented authentic Filipino cuisine, but failed to find the real deal, one that showcases the Philippines&#8217; rich melange of <strong>culture</strong>, <strong>tradition</strong> and <strong>heritage, authentic </strong>in essence and presentation.</p>

<p>I first met <strong>Ms. Glenda Barreto, Doyenne of Philippine Cuisine </strong>and  owner of<strong> <a title="Via Mare group " href="http://www.viamare.com.ph/index.html" target="_blank">Via Mare </a>group</strong> during my Puerto Azul days, as she was a member of the Golf &amp; Country Club and favorite caterer of Malacanang Palace. Till now, Via Mare is still the irreplaceable Filipino fare provider to most high level occasions not only in the Palace but also to prominent political and social figures of the country for their  impeccable cuisine and unparalleled service.</p>

<p>At the <strong>National Conference on Community Based Rural Tourism</strong> this year, I had the honor to meet, listen and shared with my co-speaker, <strong>Ms. Barreto</strong>. I told her that every time I go home to Manila, I would always eat at <a title="Via Mare Restaurant outlets " href="http://www.viamare.com.ph/outlets.html" target="_blank"><strong>Via Mare</strong><strong> </strong></a>and bring back  special native desserts, <strong>cassava cake</strong> and two kinds of rice cakes -<em>bibingka galapong</em> &amp; <em>puto bumbong -</em> all the way to Peru. I am so happy that their Landmark  Makati branch already know how to pack these delicacies for long-haul trips, thus, I still get the freshly-cooked flavors after 30 hours of travelling back to Lima! When we moved to Tokyo, Japan, I go home to the Philippines every so often for my <a title="What in the (third) world is Sustainable Tourism?" href="http://travelfoodguru.wordpress.com/2010/12/04/what-in-the-3rd-world-is-sustainable-tourism/" target="_blank">Sustainable  Tourism </a>initiatives and conference engagements, thus, I make sure I eat at Via Mare, probably the only excellent <strong>authentic Filipino cuisine</strong> that suits my palate, my only “other home” of comfort native food.</p>

<p>At the Conference, Ms. Barreto presented on Special <strong>Regional Food Presentation &amp; Exhibit</strong> where she talked about Food Knowledge, Effective Menu Planning, Recipes, Pricing and Personalized Service. She also showcased the actual Regional cooking at the venue and feted us to the best Conference dinner I have ever tasted!</p>

<p>With the recent ruckus about a<a title="NO to Megaworld's Boracay NewCoast" href="http://www.facebook.com/AgainstBoracayNewcoast" target="_blank"> mega <strong>environmental destructive </strong> development </a>offering in Boracay Island, Philippiones side by side its latest accolades, voted as <strong>Number 4</strong> <strong>World’s Best Islands</strong> by <a title="World's Best Island 2011 by Travel+Leisure" href="http://www.travelandleisure.com/worldsbest/2011/islands" target="_blank"><strong>Travel+Leisure</strong> </a>and <strong>Number 2</strong> <strong>Best Beach in the World</strong>, Number 1 in Asia by <strong><a title="Tripadvisor Travelers' Choice Best Beaches" href="http://www.tripadvisor.com/TravelersChoice-Beaches" target="_blank">TripAdvisor</a></strong>, all the more this island’s authorities and stakeholders should protect and conserve it for future generations. IF they wish to see it thriving  in the next 30 years yet!</p>

<p>In our efforts to organize <a title="Boracay Beckons- this time, a serious call for Conservation Action!" href="http://travelfoodguru.wordpress.com/2010/07/23/boracay-beckons-this-time-a-serious-call-for-conservation-action/" target="_blank">The Boracay Initiative</a>, where we have sought the institutional support from international organizations in marine and coastal ecological systems conservation, we learned these five signs of healthy beach from <strong><a title="Nature Conservancy work on oceans and coasts" href="http://www.nature.org/ourinitiatives/habitats/oceanscoasts/" target="_blank">Nature Conservancy</a></strong>. Likewise, the Philippines’ concerned agencies as well as citizens in general should take action to protect their <strong>7,107 islands</strong>!</p>
<p><strong>Lack of development</strong> is just one sign of a<strong> healthy beach.</strong> I’ll take an undeveloped beach anytime than one that is teeming with people (and consequently their trash) without regard for their footprints, so, if you care enough about your favorite beach, make sure it has these <strong>top five signs</strong> in keeping it healthy <strong>and ensure its sustainability!</strong></p>

<p><strong>1) Shells and Wildlife</strong></p>
<p>In the late 80s, in my first time to Boracay, a stroll along White Beach as well as uninhabited Puka Beach will reveal a <strong>sparkling assortment of seashells</strong> and abundance of <strong>green moss or algae</strong> that turn ultimately turns into white dust when dried,<strong> </strong>washed up by the gentle waves and also after the monsoon season. From surf clams to ghost crabs, the treasures that  surface after this season <strong>reveal the diversity of life hidden in the water</strong>.</p>
<p>The line of marine debris (NOT trash) left over after high tide is a <strong>source of food and an important breeding ground for fish and other aqua species</strong>.</p>
<p><strong> </strong></p>
<p><strong>2) Natural Sand banks</strong></p>
<p><strong>Sand banks</strong> are a coastal community’s lifeguards. These <strong>sandy mounds</strong> — and their  low-growing plants (not to be confused with weeds!) — <strong>protect the beaches</strong> in  front of them and the land behind them. Running parallel to the shoreline, gentle sloping sand dunes<strong> provide a buffer</strong> for our roads and protect infrastructure from floods. They also <strong>provide nesting habitat and a sand reserve</strong>, which comes in andy after sand shifts as a result of a storm or moonsoon rains.</p>
<p><strong>“There must be enough room behind the beach</strong> for the dunes to move landward  <strong>in the face of storms</strong> and sea-level rise”.</p>
<p><strong>3) Good Water Quality</strong></p>
<p>After a heavy rainfall, storm water can overwhelm sewage systems. That yucky runoff<strong> also picks up fertilizer and trash</strong> as it flows into the streams and rivers that ultimately spill into our oceans. Needless to say, whatever <strong>limited water source</strong> is available needs to be <strong>conserved and maintained</strong>.</p>

<p><strong>4) No Garbage</strong></p>
<p>It is disappointing to see a beautiful beach <strong>littered with plastic bags, soda cans and cigarette butts</strong>, but that’s the reality of many recreational beaches. Not only is trash an eyesore, but it also <strong>kills marine animals </strong>when they ingest it or become entangled.</p>
<p>Littering on the beach is just one part of the problem; people are also <strong>dumping trash directly into our waters</strong>. In many cases, <strong>ships</strong> are still illegally dumping into our oceans. “People throw trash overboard on ships and guess what? A lot of it washes up on the beach.”</p>
<p><strong>5) Beachscapes, marshlands and swamps </strong></p>
<p>Tidal mudflats, marshlands, ponds, lagoons, swamps and upland forests all help guard our beaches in the face of severe storms. Thus, mangroves are being reforested in <strong><a title="Meet Al Linsangan, innovative Eco hero of Palawan" href="http://travelfoodguru.wordpress.com/2010/10/06/meet-al-linsangan-innovative-eco-hero-of-palawan/" target="_blank">Coron, Palawan</a></strong>. They run parallel to the coast and provide a <strong>first line of defense for beaches when a storm hits</strong>. In addition to shielding the coast, many beach landscapes <strong>shelter a variety of fauna as well as flora that protects the beaches. </strong></p>
<p>Our greatest concern for our beaches must go beyond the beyond beaches and must encompass, more holistically, the entire beachscapes, marshes, swamps and wetlands complex. They are all <strong>linked, and necessarily in the so called “balance of nature”.</strong></p>

<p><strong>Everything is connected, </strong>and it&#8217;s important to remember <strong>to protect </strong>the entire dynamic ecosystem to <strong>maintain hope and health </strong>along our beaches and coasts. <strong>Environmental awareness AND education</strong> is critical for all to find <strong>ways to go forward with development</strong>, while ensuring that the planet’s life support systems are <strong>protected, preserved, and conserved</strong>. This is the idea behind the concept of <strong>sustainable development </strong>especially in Philippine TOURISM where livelihoods and attractions are mainly based on the<strong> NATURAL RESOURCES </strong>and the<strong> ENVIRONMENT</strong>. It seems odd that people have to be taught <strong>how to correctly develop</strong>, but there are reasons to believe many people<strong> still do not understand</strong> the impact that human actions have had and continue to have on the <strong>environment and our one and only planet! </strong></p>

<p>Our sustainability projects in the Philippines include <strong><a title="Boracay Beckons- this time, a serious call for Conservation Action!" href="http://travelfoodguru.wordpress.com/2010/07/23/boracay-beckons-this-time-a-serious-call-for-conservation-action/" target="_blank">The Boracay Initiative</a></strong>, <strong><a title="Sustainable Ethos for Occidental Negros" href="http://travelfoodguru.wordpress.com/2011/02/13/sustainable-ethos-for-occidental-negros/" target="_blank">The Negros Initiative</a></strong> &amp; <strong><a title="Meet Al Linsangan, innovative Eco hero of Palawan" href="http://travelfoodguru.wordpress.com/2010/10/06/meet-al-linsangan-innovative-eco-hero-of-palawan/" target="_blank">The Coron Initiative</a></strong>, all <strong>Conservation, Social Responsibility &amp; Sustainable Tourism</strong> framework for these respective destinations and its distinctive attractions. According to Ocean Conservancy,  <strong>cleanups alone can&#8217;t solve the marine</strong> <strong>debris problem</strong>; we need to stop it at the source. &#8220;Armed with knowledge about the most prevalent components of marine debris, <strong>elected officials can make informed policy decisions</strong>, and <strong>community leaders</strong> can more effectively tailor and expand recycling and other waste reduction programs. <strong>Corporations can see the need for improved technology</strong> and reduced packaging, and <strong>individuals are inspired to properly dispose of trash</strong> to keep it out of the ocean.&#8221;</p>
<p>To date, our respective lead advocates are still seeking <strong>institutional support</strong>, <strong>corporate benefactors, private-public partnerships</strong> and local and <strong>national government cooperation</strong> to lead these Initiatives and pave the way forward for Philippines&#8217; sustainable development.</p>

<p>As MICE practitioner since 1984, and as pioneer MITE member  I had been attending the MICE Conferences since PCVC-MITE inception of &#8220;Dream Meetings&#8221; in 1991. This time however, I had the honor to be part of the Philippine (Meetings, Incentive travel, Conventions, &amp;  Exhibitions) M.I.C.E. Conference (<strong><a title="Philippine MICE Conference 2011" href="http://www.micecon.net/Home/">PhilMICECon</a></strong>) 2011 in Cebu, Philippines as invited Guest Speaker to share my advocacy on <a title="Sustainable Tourism, Hospitality &amp; Events" href="http://sustainabilityguru.webstarts.com" target="_blank"><strong>Sustainable Tourism, Hospitality &amp; Events</strong>,</a> during the Green-themed Plenary on the topic, “<strong>Stepping Forward without Footprints</strong>.”</p>

<p>From the <strong>pre-conference </strong>arrangements to arrival day after a direct flight from Tokyo to Cebu via the country’s flagship carrier <strong><a title="Philippine Airlines" href="http://www.philippineairlines.com/home/home.jsp">Philippine Airlines </a></strong>and all throughout my stay, I   was graciously attended by the ever-efficient and long-time Tourism industry friends,<strong> </strong><strong>Ms. Noemi Cruz </strong>and <strong>Joma Gutierrez </strong>of the Philippine Tourism Bureau (<strong>PTB,</strong> which I still keep on calling PCVC) organizers of the Phil MICE Con. Right after my check-in at the Continental Club of <strong><a title="Marco Polo Cebu Hotel" href="http://www.marcopoloplazacebu.com/" target="_blank">Marco Polo Cebu</a></strong>, networking started with co-speakers, <strong>Bill Laviolett</strong> Managing Director, <a title="MICE Places" href="http://miceplaces.com/" target="_blank">I&amp;MI (Incentives &amp; Meetings  International) Media </a>from France and <strong><a title="Corbin Ball Associates" href="http://www.corbinball.com/" target="_blank">Corbin Ball</a>,</strong> Owner, Corbin Ball Associates, USA.</p>

<p>Our first day started with a <strong>Welcome Lunch</strong> for buyers and speakers at the <a title="Imperial Palace Waterpark Resort" href="http://www.imperialpalace-cebu.com/" target="_blank"><strong>Imperial Waterpark Resort</strong> </a>in Mactan Island, greeted by the entire <strong>Cebu Organizing Committee,</strong> which prepared exotic<strong> Asian themed</strong> dances. Most heartwarming was the <strong>Cebu’s children’s <em>rondalla</em></strong> which performed lively native numbers. After the scrumptious Cebu cuisine highlighted buffet, entertained by Philippine dances, off we go to probably the most “thrilling” show of all –the world famous <strong><a title="Philippine MICE Con 2011 at Cebu Dancing Inmates" href="http://youtu.be/ki7TWmK5lUU" target="_blank">Cebu Dancing Inmates </a></strong>– doing their Michael Jackson tributes. Turned out, we not only watched but also danced with them! The Cebu Provincial Detention &amp; Rehabilitation Center (CPDRC) opens its gates for performances every last Saturday of the month –a good example of social responsibility in tourism. At sundown, we moved to the <strong><a title="Waterfront Cebu City Hotel" href="http://www.waterfronthotels.com.ph/waterfront/waterfront-cebu-city-hotels-casino/" target="_blank">Waterfront Hotel  Cebu</a></strong> for the <strong>Oriental Opulence-themed</strong> cocktails and dinner. The ballroom was  transformed into a grand and lavish Eastern enclave and participants were beset with the bountiful Chinese buffet.</p>

<p>The next day, the <strong>Techno-themed </strong><strong>Opening ceremonies</strong> were graced by <strong><a title="Cebu governor" href="http://www.cebu.gov.ph/">Cebu Governor </a>Gwen Garcia</strong>, Philippine Tourism Department <strong>Secretary Alberto Lim </strong>and <strong>Hans Hauri</strong>, Chairman of the Phil MICE Con Cebu Organizing Committee. Glad to see that <strong> <a title="Bluewater Resorts" href="http://www.bluewater.com.ph/" target="_blank">Bluewater Resorts</a>, </strong>with Director of Sales &amp; Marketing<strong> Margie Munsayac</strong>, hosted coffee break has followed some <strong>green meeting </strong>practices I suggested for the event<strong>,</strong> with their <strong>native snacks in eco-friendly</strong>, reusable baskets and drinks in <strong>bamboo cups</strong>!</p>

<p>We segued to <strong>Marco Polo Hotel Ballroom</strong>, for the “i.WE.u.peopleconnect” &#8211; Techno motiff S.R.O. lunch, welcomed virtually by the hotel’s CEO in Hong Kong via Video conference. <strong>Educational Tracks Breakout sessions</strong> followed with various MICE-relevant topics.</p>
<p>Finally, <strong>Green Day Plenary</strong> has come keynoted by <strong>Authentic Ecolodges</strong> author <strong><a title="Hitesh Mehta, Authentic Ecolodges author" href="http://www.authenticecolodges.com/Author.html" target="_blank">Hitesh Mehta </a></strong>who awed the audience with his “Turning Blueprints into Green prints” presentation and “dance” performance. Then it was our turn to talk on  <strong>&#8220;Stepping Forward without Footprints”,</strong> where I shared in the discussions moderated by Ms. <strong>Chit Juan</strong> of <a title="Echo Sustainable Living Store" href="http://www.echostore.ph/" target="_blank">Echo Sustainable Living Store</a>, with Engr. <strong>Eric Raymundo,</strong> who presented the “<a title="Zero Carbon Resorts" href="http://www.zerocarbonresorts.eu/" target="_blank">Zero Carbon Resorts</a>” project of his NGO, Gruppe<strong> Angge Passte  Technologie</strong> (GrAT) and Ms. <strong>Agnes de Jesus</strong>, Vice President, <strong><a title="Energy Development Corporation Environmental Responsibility" href="http://www.energy.com.ph/our-social-and-environmental-commitment/environment/" target="_blank">Energy  Development Corporation</a></strong> who imparted the Geothermal projects at Philippines’ eco sites.</p>
<p>After the coffee break, panel discussions on “New Media Marketing” and an energetic <strong>Hi-tech Connect</strong>-motif lunch was hosted by the <strong><a title="Radisson Blu Cebu" href="http://www.radissonblu.com/hotel-cebu" target="_blank">Radisson Blu</a></strong>, Cebu’s newest de luxe hotel. Happy to meet long-ago hotelier friends, <strong>Lourdes Macalindong</strong>, VP Sales &amp; Marketing of <strong>SM Hotels &amp; Conventions</strong> and <strong>Agnes Pacis</strong>, dynamic Director of Sales &amp; Marketing of <strong><a title="Shangrila Mactan Resort" href="http://www.shangri-la.com/en/property/cebu/mactanresort" target="_blank">Shangri-la Mactan</a></strong>.</p>
<p>After the afternoon and closing plenary session, an all-out pomp and pageantry <strong>Closing &amp; Turn-over Ceremonies</strong> was tendered <strong>by Davao, the PhilMICE Con 2013 host,</strong> led by no less than their gutsy yet graceful <strong>Mayor Sara Duterte</strong>. So looking forward to helping out in the DAVAO Phil MICE Con, with long-time friend, <strong>Ms</strong>. <strong>Mary Ann Montemayor</strong> who is the Chair of the <strong>Davao Regional Tourism Council </strong> and has sounded me off that they are starting <a title="What in the (third) world is Sustainable Tourism?" href="http://travelfoodguru.wordpress.com/2010/12/04/what-in-the-3rd-world-is-sustainable-tourism/" target="_blank">Sustainable Tourism </a>activities for the province. Dazzling!</p>
<p>However, the big question for me during the whole conference as I was trying to observe is, IF the <strong>Philippine MICE</strong> industry insiders are ready to embrace <a title="Greening your events" href="http://travelfoodguru.wordpress.com/2010/10/18/greening-your-events/" target="_blank"><strong>Sustainability and Green practices</strong> </a>in their respective activities? Phil MICE Con organizers led by dynamic <strong>Stanie Soriano</strong> has graciously included the “<strong>Greening Events Guidelines</strong>” that I have particularly  prepared, on the <strong>printed program</strong>, but I doubt if anybody has read it. <strong>Not one participant </strong>even  mentioned to me having seen it.  Based on the almost <strong>non-reaction from the audience  </strong>after our plenary “Green” presentations, it seems that “Greening” for them was just  donning the green hats or outfits as was the obligatory theme for the day. Beyond that, no one has approached any of us speakers, as a matter of interest in <strong>implementing  green hotel practices, zero carbon resorts nor green events </strong>at all.</p>
<p>At breakfast on our last day, with good tourism industry colleague, <strong>Angel Bognot</strong>  who has launched his Afro Asian World Events, former Region VII Tourism  Director <strong>Dawnie Roa</strong>, and Ms. <strong>Jenny Franco</strong> of Travel Vision, I have some  encouraging signs that Cebu are into the <a title="Ecotourism 101. Ecotourism essentials" href="http://travelfoodguru.wordpress.com/2011/08/08/ecotourism-101-ecotourism-essentials/" target="_blank">Sustainable and Eco Tourism </a>mode and that they are supporting greening efforts by the province. Likewise, I was also told earlier by long-time Cebu tour operator, <strong>Alice Queblatin</strong> of <strong>Southwind Travel</strong> that they are seeking help to improve their community-based rural tourism endeavors in <strong>Olango, Cebu</strong>. Alice&#8217;s daughter, <strong>Cookie Chan <a title="Cookie Chan on Twitter" href="http://twitter.com/#!/kukitalk" target="_blank">@kukitalk</a></strong>, likewise sent me a direct message via Twitter that she will implement green practices that I have shared in the next big convention she will be organizing next in Cebu. At least with these pro-active and reliable pillars of <strong>Cebu’s</strong> <strong>Tourism industry</strong>, I can see the “green” light at the end of the tunnel that came out of the Phil. MICE Con 2011.</p>
<p><em><strong>This is a call to action and cooperation to GREEN Philippine M.I.C.E., folks. </strong></em><strong>It is high time for Filipino tourism industry leaders to focus on Sustainable Tourism, greening their hotels/resorts and organize Green Meetings &amp; Sustainable Events as a way forward and uplift the Philippine Tourism industry.</strong></p>

<p>Along with other resource persons, namely Harro Boekhold of <a title="Contour Projects" href="http://www.contour-projects.com/en/whoweare.html" target="_blank">Contour Projects </a>and Mr. Joselito Bernardo of the<a title="Asian Productivity Organization" href="http://www.apo-tokyo.org/" target="_blank"> Asian Productivity Organization</a>, we conducted the <strong>Train the Trainers in Ecotourism Planning &amp; Management</strong> Course at the <strong>International School of Sustainable Tourism, </strong>in Subic Bay, Philippines. Apparently, among the Asia Pacific participants, there is still much confusion and ambiguities of the term “Ecotourism”.</p>

<p>Not surprisingly, more so for the travel and tourism suppliers and market. Unfortunately the<strong> “eco” trend</strong> in the past years has triggered the travel industry to inundate the market with <strong>misused</strong> and <strong>misunderstood</strong> eco -labeled tourism products, from hotel accommodations to tours, from lodges to excursions, causing <strong>misrepresentation</strong> and <strong>misunderstanding</strong> among travelers from the tourism industry as to what the term &#8220;ecotourism&#8221; genuinely embodies.</p>

<p>So once and for all, we are clarifying the <strong>essence</strong> and emphasizing the<strong> basic elements</strong> of <strong>Ecotourism</strong>.</p>
<ul>
<li>Aims to <strong>conserve biodiversity</strong></li>
<li><strong>Sustains</strong> the well being of <strong>local people</strong></li>
<li>Includes a <strong>learning experience</strong></li>
<li><strong>Requires</strong> lowest possible <strong>consumption of non-renewable resources</strong></li>
<li><strong>Stresses local participation</strong>, ownership and business opportunities, particularly for rural people</li>
</ul>
<p>If your destination, property or activities does not have ALL of the above essential elements, then it is NOT &#8220;ecotourism&#8221;. In addition to these ecological essentials, Ecotourism has also these<strong> fundamental nature</strong>, no pun intended:</p>
<ul>
<li>A greater focus on <strong>authenticity</strong> in terms of destinations, products and experiences</li>
<li>It is “Green consumerism” – increased <strong>environmental awareness</strong> and concern about issues such as <strong>climate change</strong> and <strong>global warming</strong></li>
<li><strong>Sustainability</strong> should be at the heart of every tourism business and tourism product</li>
<li>Every tourism component- transport, accommodation, activities - should be ‘eco-friendly’</li>
<li>Ecotourism suppliers must keep it <strong>simple</strong> and <strong>sincere</strong> &#8211; genuine &#8220;green&#8221;!</li>
</ul>
<p><strong>Common &#8216;Eco confusion&#8217;</strong>:</p>
<ul>
<li>“Green washing”: doing green vs. being green: just because you plant a tree, does not mean yours is already an ecotourism company. Must always have all the FIVE elements: not 4, 3,  2 or 1 only!</li>
<li>Must <strong>not be confused</strong> with Community-based tourism, Pro-poor tourism, Nature tourism, Adventure travel. As mentioned, all the <strong>five eco essentials</strong> must be in place. &#8216;Nuff said.</li>
</ul>

<p>To date, <strong>Ecotourism</strong> is just tiny niche of the global tourism market, has no traction yet and has just started to be mainstreamed. Tourism has an enormous potential, but without principles that fosters <strong>responsibility</strong> and <a title="What in the (third) world is Sustainable Tourism?" href="http://travelfoodguru.wordpress.com/2010/12/04/what-in-the-3rd-world-is-sustainable-tourism/" target="_blank"><strong>sustainability</strong> </a>it can harm our planet and wreck havoc to fragile or endangered tourism destinations. So no more confusions, no doubt about it. <strong>Don&#8217;t be misled</strong> by all the &#8220;eco-ish&#8221; labels. Just memorize the 5 ECO elements; YOU cannot go wrong. <strong>Go green</strong>!</p>

<p>Since I worked for Boracay Island, Philippines in the early 90s I already started my personal crusade on “saving our seas”, if only to pick up the trash daily on morning walks along the famed White Beach. This was twenty years ago when there were only a handful of resorts on the island. Since then, rapid, unsustainable development and <a href="http://travelfoodguru.wordpress.com/2010/07/23/boracay-beckons-this-time-a-serious-call-for-conservation-action/">environmental degradation</a> in and around the island just burgeoned before our eyes. After 10 years since I left, I was brought back full circle to the island, and I had to do my part, with <a href="http://sustainabilityguru.webstarts.com/about.html">The Boracay Initiative</a>, if only to enlighten stakeholders about conservation of marine and coastal eco resources.</p>

<p>I was also given an opportunity to visit <strong>Coron</strong>, which is still a developing island tourist destination, however, I can foresee, that without a <a href="http://travelfoodguru.wordpress.com/2010/12/04/what-in-the-3rd-world-is-sustainable-tourism/">Sustainable Tourism</a> development framework in place, it is going the way of Boracay too. Thus, we also organized <a href="http://travelfoodguru.wordpress.com/2010/10/06/meet-al-linsangan-innovative-eco-hero-of-palawan/">The Coron Initiative</a> with our Lead Advocate and partner NGOs in the Coron &amp; Calamianes islands. I was also invited to visit my home-province Negros Occidental, and experienced firsthand their marine conservation effort in <strong>Sagay’s Carbin Reef</strong> as well as <a href="http://www.prrcf.org/about_prrcfi.html">Philippine Reef and Rainforest Conservation Foundation’s</a> <strong>Danjugan Island</strong>. From then, we proposed <a href="http://travelfoodguru.wordpress.com/2011/02/13/sustainable-ethos-for-occidental-negros/">The Negros Initiative</a>, mainly to organize the private-public partnership on Conservation, Social Responsibility and Sustainable Tourism for the province.</p>

<p>With my work experience at <a href="http://travelfoodguru.wordpress.com/2010/05/24/inkaterra-sustainable-tourism-and-conservation-since-1975/">Inkaterra</a>, Peru’s Eco pioneer, <strong>Carbon Negative</strong> and <strong>Conservation Leader</strong>, I had a hands-on knowledge and experience to share the best practices in protection of our ecosystems and heritage, while sharing it with the world.</p>
<p>Experience and enlightenment found along the Philippine learning curve are:</p>
<p>1.  <strong>Each Filipino</strong> citizen is a <strong>stakeholder</strong> in this <a href="http://www.visitmyphilippines.com/index.php?title=More%20Than%20The%20Usual&amp;func=all&amp;pid=835&amp;tbl=1">archipelago of 7,107 islands</a>. Each one lives in one of these islands, therefore, is accountable to his/her place, its marine and coastal resources, our <strong>natural heritage</strong>.</p>

<p>2. All <strong>businesses </strong>and <strong>local government units</strong> in the respective islands must be accountable as well – they, along with the local community are the so-called <a href="http://www.wwf.org.ph/index.php/about-us/who-we-are">private and public stakeholders</a>.</p>
<p>3. In the conservation, protection and safeguarding of our environmental and natural resources, <strong>multi- stakeholders are responsible</strong>:</p>
<p>- <strong><a href="http://www.dilg.gov.ph/lgu.php">Local Government Units</a></strong> (LGUs), to which the place and jurisdiction of the natural resources are located and entrusted</p>
<p>- <strong><a href="http://www.denr.gov.ph/index.php/home.html">Department of Environment &amp; Natural Resources (DENR)</a></strong> the government agency and its operations arm, <strong><a href="http://www.emb.gov.ph/">Environmental Management Bureau</a></strong> (EMB) which are directly in-charge, and have regional, provincial, city or municipality and in special areas, dedicated  offices</p>
<p>- <a href="http://www.pbe.org.ph/"><strong>Businesses</strong></a> or enterprises which are directly or indirectly engaged in the trade of environmental resources, such as resorts/ lodgings /restaurants, manufacturing, aqua culture &amp; fisheries, production of coastal and marine products, etc. They are responsible for the <a href="http://en.wikipedia.org/wiki/Triple_bottom_line">triple bottom line</a> for their business: <strong>community, environment and profit.</strong></p>
<p>- <a href="http://www.visitmyphilippines.com/index.php?title=EcotourismSitesbyRegion&amp;func=all&amp;pid=2519&amp;tbl=1"><strong>NGOs</strong></a> – non-government organizations whose vision and mission are to help the environment and its indigenous inhabitants.</p>
<p>- <strong>Local communities</strong><br />
-   Awareness and participation of the <a href="http://www.guardian.co.uk/commentisfree/2011/may/06/eu-fishing-plastic-seas">local community in conservation efforts</a> are keys to saving our seas, our environment and natural resources. <a href="http://travelfoodguru.wordpress.com/2011/06/05/easy-to-be-eco-ways-to-be-environment-friendly/">Getstarted at home to be eco-friendly</a>, be pro-active and report delinquents. Not only we at the present, are the direct beneficiaries, it is also for the future generations too! As the African saying goes, “we did not inherit the earth; it is just loaned to us by our grandchildren”.</p>

<p>Going beyond the key stakeholders mentioned, <strong>cooperation and collaborative </strong><strong>work  </strong>are critically needed from other government agencies to implement and enforce Environmental Laws and Acts:</p>
<p>- <strong>Department of Education</strong> – to teach and show school children how to conserve and protect. A good example is from the <a href="http://ph.news.yahoo.com/albay-adds-climate-change-school-curriculum-050112954.html">province of Albay</a>, where subjects about climate change are included in their school curriculum.  In the U.S. 8- and 10-year old kids put up their own NGO, <a href="http://onemoregeneration.org/2011/05/09/oceana-ocean-hero-awards/">OneMore Generation (OMG)</a> to help preserve endangered species and environment!</p>
<p>- <strong>Department of Justice</strong> – in most areas, the DENR &amp; the EMB are ill-equipped and powerless to go after corrupt pundits, poachers and environmental law violators. This is where the DOJ should step in and assist. Together with the <strong>LGU, Police and  community</strong>, they should apprehend and punish these criminals immediately.</p>

<p>So, my take on the Save our Seas campaign, we ALL have to do our part.  “No man is an island”, no pun intended. Let us all be vigilant and ardent in the fight against the “rape of our seas”. Together, we can <a href="http://www.grist.org/article/2011-05-12-protect-the-coral-reefs-the-life-you-save-might-be-your-own">protect our coral reefs</a>, which provide even elemental compounds for crucial medicines, health products, save lives and ensure the future of our precious <a href="http://www.eco-business.com/news/sustainable-coral-nurseries-ensure-future-of-philippine-coral-reefs">Philippine marine ecosystems</a> and resources for more generations to come!</p>
<p>I reiterate the <strong>Seven C’s for Ocean Conservation</strong> from the Ocean Project:</p>
<p><strong><em>Commit</em></strong> to becoming carbon neutral.</p>
<p><strong><em>Conserve</em></strong> by upgrading to energy saving appliances and compact<br />
fluorescent light bulbs.</p>
<p><strong><em>Consume consciously</em></strong> by reducing, reusing, recycling, and<br />
purchasing &#8220;green&#8221; products.</p>
<p><strong><em>Communicate</em></strong> about the impacts of climate change on the ocean.</p>
<p><strong><em>Challenge</em></strong> yourself daily to cut your carbon emissions.</p>
<p><strong><em>Connect</em></strong> by volunteering with a local watershed or ocean group.</p>
<p><strong><em>Celebrate</em></strong> World Oceans Day, EVERY DAY, not just today, to save our oceans.</p>

<p>There is so much hoopla about the “rape of the ocean”, switching off lights on “Earth Hour”, landslide disasters due to deforestation and mountains of garbage and plastic within our city, that we are just getting confounded and confused by the day on <a href="http://www.ewg.org/healthy-home-tips/checklist">how we can start doing our part for the earth</a>.</p>

<p>We complain no end about smog and pollution, filthy floods on typhoons aftermaths, brownouts/blackouts, water shortage, epidemics and uncollected garbage, yet we do not even know where to begin to solve these “environmental” and basic utilities issues.</p>
<p>Every election, we try to choose public officials who are supposed to bring progress to our cities, but end up mostly with broken promises. Then, when a natural catastrophe happens, it is the only time we see them again, “working to the rescue” and aid their constituents, but mostly for publicity and ratings. And we are supposed to know better!</p>
<p>So, how do we really begin to do our part, in being <strong>eco-friendly</strong> and help <strong>protect the environment</strong>? If <a href="http://news.mongabay.com/2011/0222-hance_omg.html">Kids found organization to save endangered species</a> and college students become “<a href="http://www.greenforall.org/blog/my-new-pair-of-eyes?fb">Green Ambassadors</a>”, for sure we can do it, too! Simple, we begin at home, with our families and with our own neighborhood. Here are some <strong>easy</strong>, no-brainer, beginner <strong>eco </strong>steps:</p>

Just buy the basics</p></div>
<p>1. <strong>Live frugally</strong>.<br />
Eco also means economic, and in these hard times, we have to learn to live simply. We don’t have to wait for a disaster (<a href="http://www.asahi.com/english/TKY201105210285.html">such as the Japan earthquake</a>) to start saving electricity, water; go prudent on clothes or shoes shopping and the like. Just buy the basics.</p>
<p>2. Start your <strong>car pool </strong>and <strong>commute</strong> wisely. <a href="http://www.grist.org/transportation/2011-03-07-how-much-could-you-save-by-riding-transit-instead-of-driving">Save up on gas</a>, parking expenses and carbon emissions with commuting. Avoid taking taxis and you will be surprised how much transport savings you will have at the end of the month!</p>

<p>3. Practice proper <strong><a href="http://www.ehow.com/way_5606412_proper-waste-segregation-disposal.html">waste segregation</a></strong>. Here in Tokyo, garbage will not be collected if you don’t separate correctly Avoid using plastics, BYOB. Bring your own bag. Not just to the supermarket but every time you shop. <a href="http://www.globalstewards.org/ecotips.htm">Reduce. Reuse. Recycle</a>. Be an eco-model among your neighbors and teach them as well. <a href="http://www.care2.com/greenliving/8-ways-to-inspire-re-use-in-your-community.html">Clean and green</a> your neighborhood.</p>
<p>4. Save electricity. Un-plug all appliances including your PC when not in use. Best to use power strips for multiple appliances and un-plug these so you cut-off most if not, all at the same time. <a href="http://greenlifepages.com/green-tips/item/367-5-simple-green-tips-to-drastically-cut-your-bills">You will see a dip your electricity bill</a> when you start doing this.</p>
<p>5. <a href="http://green.yahoo.com/blog/ecomii_healthy_living/72/water-wise-around-the-house.html">Save on water</a>. During rainy season, practice <a href="http://green.yahoo.com/blog/daily_green_news/170/raining-revolution-collect-rain-water-help-the-planet.html">rain catchment</a> and store clean rainwater to wash your car or water your garden. This is big water savings for the next dry season!</p>

<p>6. When going on a trip, start <a href="http://travelfoodguru.wordpress.com/2010/12/19/green-getaways/">travelling responsibly</a>. Pack light to avoid excess baggage fees and carbon emissions. Travel to cultural and natural sights but make sure your activities <strong>do not destroy</strong> the traditions and environment you visit. Start <strong>giving back</strong> to communities whose natural and traditional resources are threatened or endangered, or even join <strong>volunteer </strong>trips.</p>

<p>7. Last but not the least, get <a href="http://green.yahoo.com/">educated, enlightened, pro-active</a> in being green. Make sure to learn at least one <strong>sustainable tip</strong> a day. There are millions of <a href="http://www.greenlivingtips.com/pages/Site-Map.html">resources online</a>.  <strong>Yahoo Green</strong> is a great portal with many useful sources on <strong>living green</strong>,  nature, food &amp; health, <strong>recycling</strong>, energy, technology and other essential topics. You can also follow <a href="http://twitter.com/#!/suzytravelguru">yours truly on Twitter</a> for more on <strong>sustainability practices</strong>.</p>
<p>These may be small and simple steps, but if done altogether with your ‘hood and city, and serve as an example for your province or region, more people will take notice and before you know it, millions in the country will follow suit. When we <strong>make a  difference</strong> in our own small way, collectively, this will make a big <strong>impact</strong> and perhaps, we can convince our so called “public servants”, to start doing their jobs, too.</p>

<p>Centrally located at an original Inca settlement in Cusco, former capital of the great Incan Empire, <strong>Inkaterra La Casona</strong>, the city’s first luxury boutique hotel rise discreetly on its prestigious surroundings. <p>The land where the Inkaterra La Casona was built was originally part of the <em>Warakos</em>, the training ground of the elite<em> Inka </em>army. After the Spanish conquest in 1534, the property was given to <strong>Diego de Almagro</strong>, the Spanish cohort and later rival of Francisco Pizarro, conqueror of the Incan Empire, and founder of Lima, capital of Peru. Almagro participated in the Spanish conquest of Peru and is credited as the first European discoverer of Chile.</p>

<p>The following years the <strong><em>casona </em></strong>was turned several times over to distinguished owners to include Spanish pioneers in Chile, the Amazon. The property even became a convent and much later on <strong>Simon Bolivar’s</strong> general headquarters, after his victory in the Battle of Ayacucho, where he liberated Peru from the three-century Spanish rule.</p>

<p>Through the years, the house saw many owners until the late 60s, to include the De la Torre Urbina family and consequently Tierras Altas S.A.. In 1999, Inkaterra  acquired the property.</p>

<p>In 2006, meticulous reconstruction works, renovation and upgrade of the manor started and in May 2008, <strong>Inkaterra La Casona</strong> opened its doors to guests. Fully equipped suites with open fireplaces are graced with down duvets, heated floors and extra large bathtubs. The amenities of the manor include dining area, outdoor patio and reading lounge. <p>The youngest municipality of <strong>Negros Occidental</strong>, <strong>Don Salvador Benedicto </strong>more popularly know for its acronym<strong> &#8220;DSB&#8221; </strong>is situated 2,495 feet above sea level at the mid-center of the province, 47 kilometers of good highway from capital city, <strong>Bacolod. </strong> Its composite jurisdiction  includes two <em>barangays</em> (barrios) from Murcia town, three from San Carlos City and two of Calatrava. Established as a town in <strong>1983</strong>, it was intended to consolidate the area into a separate and independent local government unit to counter the insurgency concentrated here.  The town got its name in honor of the late <strong>Vice-Governor Salvador Benedicto</strong>, who was part in setting the Revolutionary Government of Negros Island and Siquijor during the Japanese occupation last World War II. Today, this newfound town has surpassed geographical, economic and social challenges, with its 10-year <strong>strategic master plan </strong>for residential, commercial, industrial, agricultural &amp; fishery development zones and because of this became a budding eco attraction in the province, albeit raw and emergent.</p>

<p>Though DSB is still pretty much rural, almost like a big barrio, it has already literally paved the way for bigger things to come, such as its infrastructure: impeccable <strong>picturesque highway </strong>that is the envy and adjudged <strong>“most beautiful”</strong> in the country. Its climate is moderate; cool for Philippine tropical standards with an even rainfall distribution throughout the year. Among its rural attractions are historical <strong>Barangay Igmaya-an</strong>, one of the strongholds of the province’s Revolutionary Government during the Japanese Occupation; the Monument in honor of its namesake, Don Salvador Benedicto; the picturesque mountain ranges of <strong>Mt. Mandalagan </strong>and<strong> Mt. Canla-on;</strong>  the remarkable <strong>Rice Terraces</strong>, a mini-replica of Banaue’s; attractive <strong>Malatan-og Falls </strong>amidst the lush green forest, ideal for mountain trekking; the 45-meter Hanging Bridge at Barangay Igmaya-an and of course the Zigzag Road leading to the town and the impressive <strong>scenic freeway </strong>which provided the shortest route between San Carlos, the farthest city of the province to Bacolod, as well as network links to the rest of the Northern towns and cities. DSB prides itself with <strong>indigenous tribes </strong>still existing in the area and its folkloric fiesta <strong>“Kali-kalihan”</strong> commemorating the <strong>Feast of the Kali</strong>, a long lost culture of a genuine Filipino heritage and the oldest form of weaponry, the “<strong>Arnis or Escrima</strong>.&#8221;</p>

<p>DSB officials are working towards providing the town with careful and conscientious advancement, slow but sure steps towards <strong>Sustainable development </strong>with its <strong>community based rural </strong>and <strong>agro tourism</strong>. In no time, it will be the country’s next green getaway hotspot.  </p>

<p>Last March 5, 2011, I re-visited DSB and gave a talk and presentation on <strong>Sustainable Tourism &amp; Best Green Hospitality Practices</strong>, emphasizing the need to <strong>conserve</strong> its natural resources, with careful consideration for the local community while it embarks on new tourism development to ensure its sustainability for future generations.  Attended by DSB’s town officials and educators, invited guests from neighboring <strong>First District </strong>of the province comprised of councilors, tourism officers and civic leaders were also present.</p>

<p>I was happy to see several acts from <strong>“Anagas”</strong> which was especially presented by <strong>DSB’s Cultural Consultant</strong>, play director and writer,<strong> Ismael Java</strong>. <em>Anagas</em> is an original <em>Hiligaynon</em> (regional dialect) theatrical presentation with a profound message about the environment. </p>
<p>With these inspiring simple townsfolk and sincere officials dedicating their lives on the preservation of their town, we will be working together for <strong>The Negros Initiative </strong>framework of<strong> Conservation, Community Social Responsibility &amp; Sustainable Tourism.</strong></p>

<p style="text-align:left;">I first got connected with <strong>Organic farmer </strong>&amp; <strong>social entrepreneur </strong>Ramon “<strong>Chin-Chin” Uy</strong>, Jr. via Facebook, who organized the Organic Farmers Festival in Negros Occidental last November 2010 with <em>Organic Na! </em>Negros Producers and Retailers Association <strong><a title="Organic Na! Negros Organic Producers &amp; Retailers Association " href="http://www.facebook.com/organicnanegros" target="_blank">(ONOPRA). </a></strong></p>

<p>When I presented at <strong>The Negros Initiative </strong>Conference, Chin-chin, a young, dynamic Sustainable Farming advocate immediately signified his support as our <strong>partner NGO</strong>, and we couldn’t ask for a more <strong>genuine green</strong> and <strong>Sustainability</strong> proponent who will spearhead the <strong>Community Based Rural &amp; Agro Tourism </strong>in Negros.</p>
<p>The family owned business <strong>RU Foundry and Machine Shop </strong>established <strong>Eco-Agri Development Foundation Inc.</strong> <a title="Eco Agri Development Foundation" href="http://www.facebook.com/ecoagri" target="_blank">(</a><strong><a title="Eco Agri Development Foundation" href="http://www.facebook.com/ecoagri" target="_blank">EcoAgri)</a> </strong>their NGO arm which was formed to handle all activities related to Sustainable Farming initiatives.</p>

<p>EcoAgri manages the interactive showcase farm in Barangay Pahanocoy, <strong>Bacolod City</strong>, to include exhibit or demonstration of <strong>Vermiculture</strong> and Vermicomposting, <strong>Biogas</strong> System, <strong>Lemon Grass Oil</strong> production, <strong>Hydraulic Ram Pump </strong>for drinking water and irrigation without using fossil fuel driven engine or electric motor, the <strong>Windmill </strong>(pumping water for drinking and irrigation), among other technologies to support organic farming activities.</p>

<p>As part of their mission and vision, <strong>EcoAgri </strong>with Fresh Start Organics will implement its tasks in partnership with the <strong>Negros Initiative</strong> in empowering communities for sustainable development to achieve food and environmental security, providing support services to the beneficiary communities, not only in Negros but the whole Philippines and beyond. Under its <strong>Skills Enhancement and Entrepreneurship Development</strong> (<strong>SEED</strong>) Program, they will assist out of school youths, individuals and community organizations in the fabrication of equipments and other technologies and develop them into entrepreneurs by providing additional capital and support facilities. Through their <strong>Ecological Management Program </strong>(<strong>EMP</strong>) they will assist in Waste management in partnership with the LGUs, Communities, Private Sector, Academe and NGOs; in Rain forestation, Biodiversity Protection and Conservation.</p>
<p><a href="http://travelfoodguru.files.wordpress.com/2011/02/dsc002021.jpg"><img class="alignright size-medium wp-image-664" title="Eco Agri Park Tour &amp; Presentation" src="http://travelfoodguru.files.wordpress.com/2011/02/dsc002021.jpg?w=210&#038;h=158" alt="" width="210" height="158" /></a>EcoAgri services include <strong>PURO (Produce UR Own- Organic)</strong>, Research and development, manufacturing and installation of technologies to support organic farming activities of the partners and beneficiaries; Promotion and marketing of farmers organic products under <strong>Fair Trade</strong> conditions; Establishment of community-based organic fertilizer production and Community-based seed banking, collection and propagation of indigenous varieties of rice and vegetable and other crops.</p>
<p>These activities will be shared not only with the <strong>local communities</strong> but also with all like-minded <strong>visitors to Negros</strong> who seek a holistic, <strong>rustic-chic holiday experience</strong>. Interactive <strong>Organic Farm guided tour</strong> with sumptious organic meals are offered as well as pre-scheduled presentations of the <strong>EcoAgri Showcase Farm</strong> for interested local government units (<strong>LGUs), </strong>small and medium entreprises (<strong> SMEs) </strong> and <strong>social entrepreneurs</strong> worldwide.  Aside from these, several activities throughout the year will be organized such as <strong>Organic Farmer’s Market</strong>, <strong>Food Festivals</strong> and <strong>Organic Farming Exhibitions</strong>, of course incorporating <strong><a title="Greening your Events" href="http://travelfoodguru.wordpress.com/2010/10/18/greening-your-events/" target="_blank">Green Events </a></strong>ethos!
